厚重大地味與高調柑橘味並存是南薑的特色，獨特木質香與辛辣感乃是台灣常見的薑所無法取代，且絕對不同於台灣品種的南薑味道。本草綱目記載，南薑以三年薑為上品，乃注重其性溫熱可達驅寒驅風的效果。購得新鮮南薑，可以利刃切薄片冷凍備用。
